A quesadilla is made with a tortilla and is filled primarily with cheese, other ingredients, such as cooked meat, refried beans, or vegetables may be added.The filled tortilla is then toasted or fried, usually until the cheese is melted. Once the quesadilla is cooked, it is traditionally cut into slices or wedges.This dish originated in Mexico, and the name is derived from the Spanish word queso (cheese).
I tried to customize this to our Indian style. This is a very good lunch/dinner stuff for everyone in the family, especially kids. The preparation time will be quick as we can get tortilla from any super market.

Ingredients:
- 6 pcs – Tortilla
- 1/2 cup – Mozzarella cheese(shredded)
- 1/2 – Cheddar cheese (shredded)
- 1/4 kg – Boneless chicken
- 1 no – Onion (chopped finely)
- 1/2 - Tomato (chopped finely)
- 1 tsp - Ginger Garlic paste
- 1/2 tsp - Cumin seeds
- 1 pinch - Fennel seeds
- 1 tsp - Red chili powder
- 1/4 tsp - Garam masala powder
- 1/4 tsp – Pepper powder (optional)
- 2 tsp - Coriander powder
- salt - as needed
- oil - as needed
Chicken stuffing for tortilla:
- Wash and cut chicken into small pieces and keep it aside.
- Heat oil in a pan. Splutter cumin seeds and fennel seeds. Add onion, ginger garlic paste and salt, sauté until golden brown. Add tomato, cover with lid and fry till oil separates.
- Add chicken and cook for about 2 minutes. Now add all masala powders mentioned in ingredients list. Do not add water as chicken releases enough water while cooking.
- Sauté until chicken is completely dry. Now chicken stuff is ready to fill tortilla.
- Heat a tawa, slightly toast tortilla on both sides. Now fill chicken stuff in one half of the tortilla, spread cheese and fold the other half (like a half moon shape).
- Toast it in tawa until it turns into slight golden brown and crispy (by that time cheese will also melt). Cut Quesadilla into two pieces and serve hot.
- Cheese can be of your choice. I prefer mozzarella and cheddar cheese.
- Quantity of cheese can be changed based on your choice.
