Kulfi / Malai Kulfi / Kesar Kulfi with nuts - with video

Kulfi prepared with fresh cream / malai, nuts and saffron, which tastes simply awesome and it also helps to kick your summer off right. Instead of buying artificially flavoured Kulfi’s from the market, it is better to make these simple and tasty Kulfi’s at home.

Ingredients:
Yields 5 to 6 Kulfi (depends on the size of popsicle molds)
      • 1 cup – Milk (preferably whole milk)
      • 1/4 cup – Fresh cream ( I have used 35% whipping cream)
      • 4 to 5 no’s – Almonds
      • 4 to 5 no’s – Pistachios
      • 3 to 5 tbsp – Sugar (or add as needed)
      • 1/2 cup – Milk (to mix corn  flour)
      • 1 tsp – Corn flour
      • 1 pinch – Cardamom powder
      • 1 pinch – Saffron (5 strands)
      • Chopped nuts and saffron to garnish

Preparation method:
  1. Take a hard bottomed vessel, add a cup of milk and bring it to boil. Then add sugar and mix well thoroughly till sugar dissolves.
  2. Meanwhile mix 1/2 cup of milk and corn flour thoroughly without any lumps. Add this mixture to the boiling milk and continue to stir at regular intervals to avoid lumps. Make sure to reduce the flame to medium or low flame whiling adding corn flour mixture.
  3. Dry grind almond, pistachios and saffron to a slightly coarse powder. Add this powder to the boiling milk along with the cardamom powder, mix well and continue stirring at regular intervals for 2 to 3 minutes.
  4. Add fresh cream and mix well, continue to boil for 10 more minutes. Keep stirring until the mixture becomes thick and in a pouring consistency. Check for sugar, if it is not enough, you can add at this stage.
  5. Switch off the stove and allow them to cool completely. The mixture thickens further upon cooling.
  6. Pour this to a Kulfi molds or popsicle molds and freeze it overnight. Once ready, remove carefully from the popsicle mold. A trick to removing popsicles from the molds is to run each mold under warm water for about 30 seconds, then gently twist. Repeat if needed. Serve Kulfi with chopped nuts and saffron on top. Enjoy your Kulfi.

Notes:
  • You may increase or decrease the quantity of sugar as per your sweet level. Since I have used organic sugar, It needed more than the amount mentioned above in this recipe.
  • You may replace fresh cream with khoya / mawa.
  • Make sure to wipe up any spills on the mold or tray before you put the tray into the freezer.
  • When your popsicles are completely frozen, you will be able to pull on the stick easily. If the stick comes out by itself, your popsicle is not completely frozen. If the stick stays fast, your popsicle is frozen (ready to eat).
