Mixed vegetable cutlet chaat, Chaat is one of my favorite food and I never get bored of it. Cutlet chaat would be a bonus for us, because it has healthy veggies inside, fruits and chaat masala on top. Best for Kids lunch boxes.



Ingredients:
Yields 12 to 15 (depends on the size of cutlet)
  • 3 no’s – Potato (medium sized)
  • 1/2 cup – Carrot (chopped finely)
  • 1/2 cup – Beans (chopped finely)
  • 1/2 cup – Green peas
  • 1 no – Onion (chopped finely)
  • 1 tbsp – Ginger garlic (crushed)
  • 1/4 tsp – Turmeric powder
  • 1 tsp – Red chilli powder
  • 1 1/2 tsp – Coriander powder
  • 1/2 tsp – Garam masala powder
  • 1/4 tsp – Cumin powder
  • 1/4 tsp – Chaat masala
  • Coriander leaves for garnishing
  • Salt as needed
  • Oil for deep frying
For outer layer:
  • 3 to 5 tbsp – Wheat (for coating)
  • 1/2 cup – Bread crumbs
  • 1/4 tsp – Dried herbs
  • 1 pinch – Salt
  • Water as needed for coating
For making chaat:
  • Chopped onion
  • Chopped coriander leaves
  • Pomegranate
  • Green chutney as needed
  • Dated tamarind chutney as needed
  • Nylon sev as needed


Preparation method:
  1. Boil potatoes until they are tender. Mash it and keep it aside.
  2. Pressure cook carrot, beans and green peas with a very little water for 1 to 2 whistles and set it aside.
  3. Heat oil in a pan, add onion and ginger garlic, saute until golden brown. Then add cooked carrot, beans, peas and along with enough salt.
  4. Now add turmeric powder, coriander powder,garam masala powder, red chilli powder, cumin powder, and saute until raw smell goes. Add mashed potatoes, chaat masala and sprinkle chopped coriander leaves, mix well.Switch off the stove and allow them to cool.
  5. Shape this mixture into round or oval shaped patties. Dip first in the wheat mixture (mix wheat in water with a pinch of salt and dried herbs.consistency should be watery) and then the bread crumbs;coat well on both the sides. Deep fry until nicely browned.Serve hot with tomato ketchup or any chutney.
  6. Now making chaat: In a lunch box, add vegetable cutlet as many as needed, add chopped onion, coriander leaves, green chutney,tamarind chutney, pomegranate, finally add nylon sev on top. If preferred, sprinkle little chaat masala at the last.


Notes:

  • Always keep flame in medium heat.
  • You can also deep fry them instead of shallow fry.
