Sattvik vegetable soup/இந்த சூப்பை குழந்தை முதல் பெரியவர்கள் வரை சாப்பிடலாம்/Recipe for quarantine

Quick and easy at the same time very healthy soup recipe that can be prepared with available vegetables at home during quarantine. This soup does not have too many spices, as it is very simple and mild, it can be eaten by children as well as senior citizens.

Ingredients: Serves 3 to 4
  • 1 cup - Carrot
  • 1 cup - Potato
  • 1 cup - Green peas
  • 1 small - Tomato
  • 5 to 6 no's - Small onion/chinna vengayam
  • 1/2 inch - Ginger
  • 2 clove - Garlic
  • 1 no - Bay leaf
  • Salt and pepper powder to taste
  • Coriander leaves as needed
  • Any crackers of your choice for garnishing

Preparation method:

1.Heat a pan, add chopped carrot,potato,green peas,tomato,small onion,ginger,garlic and bay leaf, enough water to cook. Bring it to boil and cook until they are 1/2 done. Add the chopped coriander leaves and switch off the stove.
2.Allow them to cool completely and grind it to puree. Bring this puree back to the same pan, add enough water to bring it to the desired consistency. Add enough salt and pepper powder, bring it to boil.
3.Switch off the stove, serve the soup with coriander leaves and crackers. You may serve it with a slice of toasted bread.


Notes:
  • You can make soup with any vegetables of your choice.
