Hummus is a very popular dip/spread in the Middle east. It is prepared with cooked chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. I have prepared hummus with roasted red bell pepper which is smoky and creamy. Hummus is usually served with pita bread or raw vegetables or with chips.

Ingredients:
Yields around 1 cup of hummus
      • 1 cup – Chickpeas / garbanzo beans (cooked till soft)
      • 1 medium – Red bell pepper / Red capsicum
      • 3 small – Garlic cloves
      • 1 tbsp – Tahini paste
      • 1 to 2 tbsp – Olive oil
      • 2 tsp – Lemon juice (or add as needed)
      • Salt to taste
      • Smoked paprika for garnishing

Preparation method:
  1. Roast red pepper until they are tender and smoky. To roast red pepper, you may either use conventional oven or gas stove top. Refer video and stepwise pictures for roasting red peppers.
  2. Remove the skin completely and chop them into fine pieces. Set it aside.
  3. Take a food processor (I have used mini processor), add in cooked chickpeas, garlic, salt to taste, roasted red pepper (reserve little for serving) and blend it well till they are 3/4 done(slightly coarse paste). Scrap the sides at regular intervals.
  4. Add olive oil, tahini and lemon juice, continue to blend until smooth or till you reach the desired consistency.
  5. Garnish hummus with olive oil, smoked paprika and reserved red pepper. Serve with fresh vegetables, baked chips, or use in some healthy recipes to gain protein.

Notes:
  • How to cook chickpeas: Soak and cook chickpeas till they are soft and tender. Drain water and allow them to cool completely.
  • Adjust lemon juice and olive oil according to taste and consistency.
  • If you do not have tahini, replace it with 2 tbsp of white sesame seeds (not roasted).
