Chickpea salad is a tangy and tasty salad prepared with chickpea and vegetables in yogurt dressing.
Ingredients:
For salad:
- 2 cup – Cooked chickpea
- 1 cup – Carrot grated
- 1/4 cup – Red onion (chopped finely)
- 1/2 cup – Tomato (chopped finely, remove seeds)
- 1/4 cup – Cucumber (chopped finely)
- Lettuce as needed
- Salt as needed
For yogurt dressing:
- 1/2 to 1 cup – Plain yogurt
- 2 tbsp – Olive oil
- 1 tbsp – Lemon juice
- 1/2 tsp – Garlic minced
- 1/4 tsp – Red chilli powder
- 1/4 tsp – Black pepper powder (as needed)
- 1 tbsp – Chopped coriander leaves
- Salt as needed
Preparation method:
- In a bowl, add all the items given in the list for dressing. Mix and beat it well with the fork. Set aside.
- Take a mixing bowl, add chickpea, carrot, onion, tomato, cucumber and mix well. Then add yogurt dressing on top and mix it well again. Check for the salt and pepper, if needed add more.
- Chickpea salad is ready and serve it on top of lettuce. Take a lettuce wrap and place a spoon of salad on it and enjoy every bite.
