Banana dosai/Red rice pancake/ Sweet banana pancake

Simple and yummy sweet dosai prepared with red rice flour, banana and jaggery. Best breakfast that kids can have in the morning. It has nuts in-between for a little crunch.Definitely it makes wonders on your breakfast table.


Ingredients:
Serves 3 to 4
  • 1 cup – Red rice flour
  • 1/4 cup – Wheat flour
  • 2 to 3 – Bananas
  • 2 to 3 tbsp – Jaggery powder
  • 2 to 3 tbsp – Nuts chopped
  • 1/8 tsp – Dry ginger powder
  • 1/8 tsp – Cardamom powder
  • Salt to taste
  • Water to mix

Preparation Method:
  1. Take a mixing bowl, add banana and mash it thoroughly. Add red rice flour,wheat flour,jaggery, nuts,dry ginger powder,cardamom powder, and salt, mix well.
  2. Add enough water(approximately 1 to 2) and mix well thoroughly. Batter consistency should be slightly thick like a waffle batter not like our regular dosa batter. Refer the video.
  3. Heat a pan, add ghee and spread the batter like a pancake. Cover with a lid and cook for 2 mins and flip over to other side. Continue to cook until it is well done. Continue the same process with the rest of the batter.
  4. Yummy banana dosa/pancake is ready. Serve with maple syrup or you may eat it plain.




Notes:



  • You may replace red rice flour with regular rice flour.
  • You may add jaggery powder as per your taste.
