Fruit custard/ Fruit custard with chia seeds / Fruit custard with tutti frutti/ Recipe with video / Version 2.0

Simply yummy dessert that you can prepare, impress and also inspire your guests and your family members. You may serve this delicious fruit custard with any of the toppings your wish like chopped nuts, chocolate syrup or strawberry syrup etc.


Ingredients:
Serves 4 to 5
For custard:
  • 2 tbsp – Custard powder (I have used vanilla custard powder)
  • 4 tbsp – Sugar (or add as per you sweet level)
  • 4 cups / 1 litre – Milk
For serving:
  • 1 tsp – Chia seeds
  • 2 tbsp – Tutti frutti / Dried candied papaya
  • 1/2 cup – Apple chopped (or add any fruits of your choice)
  • 1/2 cup – Banana chopped
  • 1/2 cup – Cantaloupe chopped
  • 1/4 cup – Blueberry

Preparation method:
For making creamy custard:
  1. Heat 3 1/2 cup milk in a sauce pan, reserve the 1/2 cup to mix the custard powder and add sugar, mix well and bring it to boil.
  2. Meanwhile, in a mixing bowl add custard powder and slowly add 1/2 cup of reserved milk(Luke warm), mix well thoroughly without any lumps.
  3. When milk is hot, add the custard powder mixture slowly and continue to mix well over low or medium flame.
  4. The mixture will start thickening so you have to be very cautious and keep stirring you reach a creamy consistency. It should be like pouring consistency.
  5. Switch off the stove and allow the custard mixture to cool down completely. I used to cover with a lid with enough vent for the steam to release, to avoid drying on top.
  6. Once it reached luke warm stage, strain the custard using strainer or filter, this step helps the custard free of lumps.
  7. Transfer this strained custard to a mixie jar and quick grind with 1 or 2 pulses(quick grind mode in Preeti mixie). Do not grind it for longer time, it may curdle. This step helps the custard to be creamy and smooth in texture.
  8. Refrigerate until you are ready to serve. It will get thicker and a jelly like consistency.

For making fruit custard:
  1. Soak 1 tsp of chia seeds in enough water for 15 to 20 mins. It will enlarge and become like a jelly, set it aside.
  2. Take the custard from the refrigerator, add all the chopped fruits and mix well. Finally top it with chia seeds and tutti frutti and serve cold.

Notes:
  • The consistency of custard mixture should be a little watery because when you refrigerate, it will automatically thickens.
  • Process of straining and quick grinding helps the custard to be lump free, smooth and creamy in texture.
  • You may use any fruits of your choice. Try to avoid any citric fruits as it may affect the taste of the dessert.
  • Fruit custard should be served cold for better taste and texture.
  • You may serve fruit custard with any of the toppings of your choice like chopped nuts, chocolate syrup or strawberry syrup etc.
