Phirni is an authentic Indian dessert from the state of Punjab. It is a rich, creamy and delicious dessert prepared with saffron, rice paste, and milk. It is a very popular sweet in the Northern part of India, especially in roadside dhabas. Traditionally earthen bowls or manchatti is used to serve phirni. A yummy dessert that you can prepare and relish with your family for this Diwali.

Ingredients:

Serves 4 to 5

      • 1/4 cup – Basmati rice
      • 1 litre or 4 cup – Milk (preferably whole milk or 3%)
      • 1/8 tsp – Cardamom powder
      • 1/4 cup – Sugar
      • Few strands – Saffron
      • Chopped nuts for garnishing (almonds, pistachios etc)

Preparation method:

  1. Wash and soak basmati rice in enough water for about 30 minutes. Drain and grind in a blender to make a coarse paste by adding little water.Set it aside.
  2. Soak saffron in a tablespoon of lukewarm milk and set it aside.
  3. Heat milk in a heavy bottom pan, when the milk comes to a boil, add the rice paste and saffron mixture, Continue to cook till the mixture has reduced to half.
  4. Add sugar and cardamom powder, mix well thoroughly and cook till the mixture is thick. Pour the phirni in earthen bowls or any serving bowl of your choice.
  5. Garnish with chopped nuts and few saffron strands. Then refrigerate for 6-8 hours before serving.

Notes:

  • You may increase or decrease the quantity of sugar as per your taste. 1/4 cup of sugar was just perfect for me.
  • Make sure you refrigerate phirni before serving. Serving them in earthen bowls gives nice flavor to the dessert. It also looks very attractive.
  • Soaking saffron is completely optional. You may just add it directly to the boiling milk along with rice paste.
