📋 Ingredients

For the Udon Noodles:

  • 2 packs instant Japanese-style udon noodles (from a 4-pack)
  • Water (for boiling)

For the Shrimp Marinade:

  • 6 nos or 250g shrimp (peeled and deveined)
  • ¼ tsp salt
  • ¼ tsp pepper powder
  • 1 tsp lemon juice

For the Stir Fry:

  • 1 tbsp oil (for shrimp)
  • 1 tbsp olive oil (for stir-fry)
  • 3–4 garlic cloves, finely chopped
  • 2 stalks spring onion (white and green parts separated)
  • 1 medium onion, chopped into cubes
  • 1 small capsicum (bell pepper), cubed
  • A pinch of salt
  • ¼ tsp pepper powder

For the Sauce:

  • 2 tsp teriyaki sauce
  • 1 tsp chili paste or sriracha (adjust to taste)
  • ¼ tsp sugar

Garnish (optional):

  • Roasted sesame seeds

Step 1: Cook the Udon Noodles

  1. Boil water in a large pot.
  2. Add the instant udon noodles and cook for 2 minutes (follow package instructions).
  3. Drain the noodles completely.
  4. Rinse them under cold running water to stop further cooking and remove extra starch.
  5. Drain again and set aside.

Step 2: Marinate the Shrimp

  1. In a bowl, combine shrimp with salt, pepper powder, and lemon juice.

  1. Add the cooked shrimp to the wok.
  2. Add 2 tsp teriyaki sauce1 tsp chili paste or sriracha, and ¼ tsp sugar (you can add the sugar now or earlier while adding sauces).
  3. Mix everything well to coat the shrimp and veggies evenly.

Step 6: Add the Udon Noodles

  1. Add the cooked udon noodles to the wok.
  2. Toss everything together until the noodles are well combined with the sauce and other ingredients.
  3. Taste and adjust salt or spice if needed.

Step 7: Finish and Garnish

  1. Add the green part of the spring onions.
  2. Sprinkle roasted sesame seeds for an optional nutty crunch.
  3. Give it a final quick toss and turn off the heat.
