🍪 RECIPE: 4-Ingredient Almond Coconut Cookies (No Sugar, Gluten-Free, Air Fryer) 📝 Ingredients:
  • 15 soft dates (soaked)
  • 2 cups almond flour
  • 1/2 cup desiccated coconut
  • 1 tbsp heaped cocoa powder
👩‍🍳 Step-by-Step Instructions:
  1. Soak 15 dates in boiling water for 15–20 minutes or until soft. Drain the water completely and let the dates cool slightly. (Tip: You can drink the date water or use it in smoothies—it's delicious!)
  2. Blend the softened dates into a smooth paste without adding any water.
  3. In a mixing bowl, combine the date paste, 2 cups almond flour, 1/2 cup desiccated coconut, and 1 tbsp cocoa powder. Mix until well combined. The dough should be firm.(If the dough is too soft, add a little more almond flour or coconut. Do not add water.)
  4. Take a small portion (gooseberry-sized) of dough, roll it into a ball, then flatten it gently between your palms.(Don’t make them too thick—thinner cookies will cook better and turn out crispier.)
  5. Use a fork to make fun patterns on top (optional but fun!).
  6. Preheat your air fryer. Cook the cookies at 350°F (180°C) for 12–15 minutes, flipping halfway through (around 6 minutes).
  7. Cooking time may vary depending on your air fryer model—check until they’re crispy and golden. Cool & Enjoy
  8. Let the cookies cool slightly before eating—they'll firm up more as they cool. Repeat the process for the remaining dough.
