- 1 cup lukewarm milk
- 1 tbsp instant yeast
- 2 tbsp sugar
- 1 tsp salt
- 1 egg
- 1/4 cup coconut oil (or any cooking oil of your choice)
- 3 cups all-purpose flour (plus extra if needed)
- 1 tbsp olive oil (for coating the dough)
- 400g paneer, cubed or crumbled
- 1/2 tsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1 1/2 tsp coriander powder
- 1/2 tsp garam masala powder
- 1 tsp cumin powder
- 1/2 tsp pepper powder
- Salt to taste
- 1 tbsp curd or yogurt
- 1 medium onion, chopped
- 1/2 tomato, chopped
- 1–2 tbsp oil (for sautéing)
- Fresh coriander leaves, chopped (for garnish)
- 2 tbsp milk (for brushing)
- White and black sesame seeds (for garnish)
- In a mixing bowl, combine lukewarm milk, instant yeast, and sugar. Mix well and let sit for 5 minutes (if not using instant yeast).
- Add 1 tsp salt and 1 egg. Mix again.
- Add 1/4 cup oil and 3 cups of all-purpose flour.
- Mix until a soft, slightly sticky dough forms. Add a little more flour if needed.
- Knead for 5–8 minutes until the dough is smooth and elastic.
- Add 1 tbsp olive oil, coat the dough well, and cover it. Let it rise in a warm place for 1–2 hours or until doubled in size.

- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1 tbsp curd/yogurt
- Mix well and set aside for 15 minutes.
- Heat oil in a pan. Sauté chopped onion and tomato with a pinch of salt until soft.
- Add the marinated paneer. Add 1 tsp cumin powder, 1/2 tsp pepper powder, and more salt if needed.
- Cook for 5–7 minutes, until paneer is cooked and mixture is dry.
- Garnish with chopped coriander leaves. Set aside to cool.
- Once dough has risen, punch it down and knead again briefly.
- Divide into 8 equal balls.
- Flatten each ball into an oval or circle, place a spoonful of stuffing on one end, and roll up. Seal the edges.
- Repeat for all buns.
- Place buns on a greased or parchment-lined tray.
- Brush the tops with milk and sprinkle white and black sesame seeds.
- Preheat oven to 400°F / 200°C.
- Bake for 12–15 minutes, or until golden brown.
