Spicy vazhakkai fry is a blend of raw plantain and freshly ground coconut masala. It is simple dish that can be prepared in a jiffy.
Ingredients:
- 2 nos – Raw plantain/Vazhakkai (peel and chop into big cubes)
- 1/4 tsp – Turmeric powder
- 1 1/2 tbsp – Oil
- 1/4 tsp – Mustard seeds
- 1/4 tsp – Split black gram
- 1 pinch – Asafoetida
- 4 or 5 nos – Curry leaves
- Salt as needed
For grinding:
- 3 tbsp – Coconut grated
- 1/4 tsp – Fennel seeds
- 1/4 tsp – Cumin seeds
- 1/4 tsp – Mustard seeds
- 2 or 3 nos – Dry red chillies
- 1/2 inch – Ginger
Preparation method:
- Boil the chopped plantains in a cup of water, along with a pinch of turmeric and salt and cook till they turn soft. Approximately it takes about 5-6min to cook. Do not over cook it.
- Grind items given “for grinding” to a smooth paste. Set aside.
- Heat oil in a pan, season with mustard seeds, split black gram, asafoetida and curry leaves.
- Then add cooked raw plantain, ground masala paste along with required salt, cook them for 5-6 mins over a low flame or until raw smell goes and gets dried enough. Serve hot with white rice and sambar.
