Easy Zucchini Fritters Recipe | Breakfast & Snack Idea

In today’s post, I’m sharing an easy and delicious Zucchini Fritters Recipe that you can enjoy for breakfast, evening snack, or even lunch. These fritters are crispy on the outside, soft inside, and packed with flavor.

Since zucchinis grow really fast in my backyard, I try different recipes like sambar, paruppu kootu, chutney, and more — but today’s zucchini fritters turned out to be a huge hit with my family! 💚

Ingredients:

  • 1 medium zucchini (peeled and grated)
  • 1 egg
  • A handful of chopped spring onions (white & green parts)
  • ½ cup corn flour
  • ½ cup bread crumbs (panko preferred)
  • ½ tsp garlic powder
  • Salt to taste
  • ½ tsp pepper powder
  • ¼ cup cheese of your choice
  • ½–1 tsp dried herbs (oregano, Italian seasoning, or your choice)
  • ¼ tsp baking powder
  • Butter or oil for cooking

Instructions:

  1. Peel and grate the zucchini. Place it in a sieve, sprinkle with a little salt, mix well, and let it rest for 1 hour.
  2. Squeeze out the excess water using your hands. Do not discard the water — keep it aside for later.
  3. In a mixing bowl, add the grated zucchini, egg, spring onions, corn flour, bread crumbs, garlic powder, salt, pepper powder, cheese, dried herbs, and baking powder. Mix everything thoroughly.
  4. If the mixture feels too dry, add the reserved zucchini water little by little until you get a slightly thick, dough-like consistency.
  5. Heat butter (or oil) on a pan/tawa. Take a scoop of the mixture and spread it into small or medium-sized circles.
  6. Cook until golden brown on one side, then flip and cook the other side until crispy.
  7. Serve hot with ketchup, chutney, or any dipping sauce of your choice.
