🍉 Recipe: Watermelon Jelly (No Artificial Color | Agar Agar Recipe)

Ingredients

  • 2 cups watermelon juice (strained) (from ½ medium-sized watermelon)
  • 1 tsp agar-agar powder (or agar-agar strands, adjusted accordingly)
  • 1 tbsp sugar (adjust based on sweetness of watermelon)
  • 1 tsp lime juice (optional, for tangy taste)
  • 1 tsp chia seeds (optional, for watermelon seed effect)


Step-by-Step Instructions

  1. Cut the watermelon in half and scoop out the flesh from one half. Scrape the rind nicely, as it will be used as the mold for the jelly.
  2. Blend the watermelon flesh and strain it to remove pulp. Measure 2 cups of juice.
  3. Transfer the juice into a saucepan and add 1 tsp agar-agar powder. Mix well until no lumps remain.
  4. Add 1 tbsp sugar (or more/less depending on sweetness).
  5. Switch on the stove, bring the mixture to a boil, and cook for about 10 minutes until the agar-agar and sugar are fully dissolved. The juice will turn bright red and slightly thick.
  6. Add 1 tsp lime juice (optional) for a tangy flavor. Mix well and turn off the stove.
  7. Immediately pour the hot mixture into the prepared watermelon rind.
  8. Allow it to cool at room temperature, then refrigerate for 2–3 hours or until fully set.
  9. Once set, sprinkle chia seeds on top (optional) to look like watermelon seeds.
  10. Slice carefully and serve chilled—smooth, silky, and naturally colorful watermelon jelly!
