In this post, I’m sharing an instant version of mini jangiri made using urad flour (ulunthu maavu) — perfect for Diwali! No soaking, no grinding, and no special equipment needed. Just mix, fry, and dip in syrup for soft and juicy jangiris every time. This is a quick and easy sweet recipe that can be prepared in under 30 minutes. Ingredients:
- Urad flour (ulunthu maavu) – 1 cup
- Rice flour – 2 tbsp
- Edible food color – 1/8 tsp (orange or yellow)
- Salt – a pinch
- Baking soda – a pinch
- Water – as needed
- Oil – for frying
For Sugar Syrup:
- Sugar – 2 cups
- Water – 1 cup
- Cardamom powder – 1/4 tsp
- Edible color – 1/8 tsp
- In a bowl, add 1 cup urad flour, 2 tbsp rice flour, salt, baking soda, and edible color.
- Mix all the dry ingredients well.
- Add water little by little to make a thick, fluffy paste.
- Beat the batter for a few minutes to make it light and airy.
- In another pan, add 2 cups sugar and 1 cup water. Boil until it reaches one-string consistency.
- Add cardamom powder and edible color, then turn off the heat.
- Fill the jangiri batter into a ziplock or piping bag, cut a small hole at the tip.
- Heat oil on medium flame.
- Gently squeeze the batter into the oil in circular jangiri shapes.
- Fry both sides until golden and crisp.
- Remove from oil and immediately drop them into the hot sugar syrup.
- Let them soak for 5–10 minutes.
- Take them out and serve warm or at room temperature.
