🍽️ Aval Kesari Recipe | Poha Kesari | Flattened Rice Kesari
✨ Ingredients
- 1 cup thick aval (poha/flattened rice) – red aval can also be used
- 2 cups water
- ¾ to 1 cup sugar (adjust to taste)
- 2 tbsp ghee (divided)
- 1 tbsp cashew nuts
- 1 tbsp raisins
- A few saffron strands (soaked in hot milk)
- ¼ tsp cardamom powder
- A pinch of yellow food color (optional)
📝 Step-by-Step Instructions
- Heat 1 tsp ghee in a pan, roast the aval until crisp, and set aside to cool slightly.
- Once cooled, grind the roasted aval to a coarse rava/sooji-like texture (do not make it fine).
- Heat 2 cups of water in a pan, bring it to a boil, and add the ground aval. Stir well to avoid lumps.
- Cook until the aval absorbs all the water.
- Add sugar, mix well, and then add saffron milk, cardamom powder, and food color (if using). Stir everything thoroughly.
- Add 1 tsp of ghee, cook for 2–3 minutes on medium flame until the sugar melts and combines well.
- In a separate pan, heat 1 tbsp ghee, roast cashews and raisins until golden, and add them to the kesari.
- Mix well, switch off the stove, and let it rest. It will thicken as it cools.
- Serve warm or at room temperature.
