🍽️ Step-by-Step Recipe Instructions 

Ingredients:

  • Pumpkin seeds – 1 cup
  • Makhana (Lotus seeds) – ½ cup
  • Sunflower seeds – ¼ cup
  • Mixed nuts (almonds, walnuts, pistachios) – ½ cup
  • Dry coconut / desiccated coconut – ¼ cup
  • Dates – 8 to 10 (adjust sweetness)
  • Ghee – 1 tsp
  • Cardamom powder – ¼ tsp

Instructions

  1. Dry roast 1 cup pumpkin seeds on medium flame until they start to pop. Set aside.
  2. Roast ½ cup makhana until crispy and keep aside.
  3. Roast ¼ cup sunflower seeds for a minute and set aside.
  4. Lightly roast ½ cup mixed nuts and keep aside.
  5. Roast ¼ cup dry coconut on low flame for a few seconds without browning.
  6. Add 1 tsp ghee to the pan, add the dates, and cook until they soften.
  7. Allow everything to cool completely.
  8. Add the roasted seeds, nuts, and ¼ tsp cardamom powder to a blender and grind into a coarse powder.
  9. Add the softened dates and blend again to combine.
  10. Transfer the mixture to a plate and shape into small ladoos (gooseberry size).
  11. (Optional) Roll the ladoos in extra dried coconut.
  12. Store in an airtight container and enjoy 1 ladoo daily for a healthy snack.
