🍽️ Step-by-Step Recipe Instructions
Ingredients:
- Pumpkin seeds – 1 cup
- Makhana (Lotus seeds) – ½ cup
- Sunflower seeds – ¼ cup
- Mixed nuts (almonds, walnuts, pistachios) – ½ cup
- Dry coconut / desiccated coconut – ¼ cup
- Dates – 8 to 10 (adjust sweetness)
- Ghee – 1 tsp
- Cardamom powder – ¼ tsp
Instructions
- Dry roast 1 cup pumpkin seeds on medium flame until they start to pop. Set aside.
- Roast ½ cup makhana until crispy and keep aside.
- Roast ¼ cup sunflower seeds for a minute and set aside.
- Lightly roast ½ cup mixed nuts and keep aside.
- Roast ¼ cup dry coconut on low flame for a few seconds without browning.
- Add 1 tsp ghee to the pan, add the dates, and cook until they soften.
- Allow everything to cool completely.
- Add the roasted seeds, nuts, and ¼ tsp cardamom powder to a blender and grind into a coarse powder.
- Add the softened dates and blend again to combine.
- Transfer the mixture to a plate and shape into small ladoos (gooseberry size).
- (Optional) Roll the ladoos in extra dried coconut.
- Store in an airtight container and enjoy 1 ladoo daily for a healthy snack.
