🍯 Step-by-Step Recipe Instructions

Ingredients:

  • 1 cup rice flour (store-bought)
  • 1 cup jaggery
  • 1 cup water
  • ¼ cup water (for mixing rice flour)
  • ¼ tsp cardamom powder
  • 2 tsp ghee
  • Oil for frying

Instructions:

Prepare the Rice Flour:

  • Take 1 cup of store-bought rice flour.
  • Add ¼ cup of water little by little and mix thoroughly.
  • Rub the flour between your fingers, like preparing puttu flour.
  • The flour should hold shape when pressed and turn to powder when crushed.
  • Sieve the flour to remove lumps and cover with a plate to retain moisture.

          Make Jaggery Syrup:

          • In a pan, add 1 cup jaggery, 1 cup water, and ¼ tsp cardamom powder.
          • Bring to a boil until the jaggery melts.
          • Strain to remove impurities, then boil again until it bubbles up.

          Combine Flour and Jaggery Syrup:

          • Add the prepared rice flour little by little to the boiling syrup.
          • Mix continuously to avoid lumps.
          • Add 2 tsp of ghee in between and continue mixing until it forms a thick dough.

          Check Dough Consistency:

          • Take a small portion of the dough and roll it into a ball.
          • If it holds shape, the dough is perfect.
          • Allow it to cool completely.


          Shape the Adhirasam:

          • Take a small lime-sized dough ball.
          • Place it on parchment paper and flatten it gently (not too thick or thin).
          • Alternatively, press between two parchment papers for even thickness.

          Fry the Adhirasam:

          • Heat oil on medium flame (not too hot).
          • Drop each adhirasam gently into the oil.
          • Once it puffs up, flip and cook until golden brown on both sides.
          • Gently press with a ladle to remove excess oil.
          • Repeat the same process until all dough is used.

          Serve and Enjoy:
