Air-Fried samosa

Everyone loves samosas but always having concerns about oil-fried and calories. No worries anymore, try this yummy air fried samosa with less oil and cooks under 15 minutes. 


Ingredients: yields around 8 samosas For outer layer:
  • 1 cup - Maida
  • 1/4 tsp - Ajwain seeds/omam (crushed)
  • 2 tsp - Hot oil
  • Salt to taste
  • Water to knead
For stuffing:
  • 3 medium - Potatoes (boiled and mashed roughly)
  • 1/2 cup - Frozen green peas
  • 1 no - Onion (sliced)
  • 1/4 tsp - Ginger chopped
  • 1/4 tsp - Turmeric powder
  • 1/2 to 1 tsp - Red chili powder (or add as needed)
  • 1/4 tsp - Garam masala powder
  • 1/2 tsp - Cumin seeds
  • Pinches of Asafoetida/hing
  • 1 to 2 tsp - Oil for sautéing
  • Coriander leaves for garnishing
  • Salt to taste


Preparation method:

Making of stuffing:

  1. Heat oil in a pan, splutter the cumin seeds and asafoetida. Followed by sliced onion and ginger chopped, sauté for few seconds along with little salt for the onions to cook fast. Cover with lid and cook for a minute.
  2. Add roughly mashed potatoes and green peas, mix well for a few seconds. Add turmeric powder, red chili powder and garam masala powder, saute until the raw smell goes. You may cover with a lid and cook for 5 to 10 mins. Finally garnish with coriander leaves and set the stuffing aside.


Making of samosa:
  1. Take a mixing bowl, add maida,salt,ajwain crushed, hot oil and enough water. Knead well to get a soft and pliable dough. Make a lemon sized ball out of the dough. I got 4 lemon sized balls.
  2. Take a rolling pin, roll out the balls into a big circle like roti/tortilla. Cut into semi circles. Now you can make 2 samosas out of a ball.
  3. Make a cone out of the semi circle as shown in the video. Fill the potato stuffings and seal it properly with flour paste(wheat/maida and water). Continue the same process with the rest of the dough.
  4. I could make 8 samosas out of the dough. It depends on the size of the samosas you are making. I made it like a big Punjabi samosas.
  5. Preheat the air fry for 3 minutes on air fryer mode with 390 F. Meanwhile brush the samosas with oil and get it ready to fry.
  6. Place the oil side down on the air fryer and continue to brush with oil on the other side too. Air fry for 5 minutes on one side. After 5 minutes, turn over to other side and continue to fry for another 5 minutes.
  7. Cook until it is well cooked and you reached the golden brown color on both sides. You may brush the samosa with oil whenever you see them dry.It took me just 10 to 12 minutes to get perfect browned samosas.Serve it with tomato ketchup.
